Cajun Jumbalaya (Vegan or Traditional)

Whenever I need a good hearty (but still healthy) meal I turn to my homemade jambalaya! 🌶🌶🌶 And always with @fieldroast Italian sausages, brown rice, green bell pepper, jalapeno pepper, yellow onion, fresh tomatoes, and a slough of cajun seasonings.

I have adapted my original recipe from several years ago to be vegan/plant-based since I discovered the wonders of seitan/wheat meat!! 🌾

I have included both the traditional and vegan version of this recipe. I do eat seafood and wild game on occasion and sometines include shrimp (always wild caught instead of farm raised) when making this for my family. 🍤

Cajun Jumbalaya (Vegan or Traditional)

bell pepper, jalapeno pepper, and a slough of cajun seasonings make this a hearty & healthy meal that will warm you with a kick!

Ingredients

  • 1.5 cup brown rice
  • 3 vegan Italian sausages
  • 1 lb of raw shrimp (insert 3 extra sausages for vegan recipe)
  • 1 fresh tomato (or one 14.5 oz can of diced tomatoes)
  • 1 baseball sized onion
  • 2 jalapenos
  • 1 green bell pepper
  • 14.5 oz can of tomato sauce
  • 2 cloves garlic, minced
  • 3 tsp cajun seasoning
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • 1 tbsp Italian seasoning
  • 2 tsp cayenne pepper (optional)

Directions

  1. Cook rice and season with a small amount of cajun seasoning, paprika, and garlic powder. Set aside.
  2. Slice sausage and saute until it is crisp and browned, set aside.
  3. Cook peppers and onions over medium heat with a little olive oil in large skillet until soft.
  4. Add shrimp, fresh tomato, and minced garlic (if using canned diced tomatoes add those when tomato sauce is added instead of at this point). Saute until shrimp is fully cooked. For the vegan version, just add tomato and minced garlic at this point.
  5. Season mixture with Cajun seasoning, black pepper, garlic powder, and optional cayenne pepper.
  6. Add rice, sausage, and tomato sauce to skillet.
  7. Mix all ingredients together over low heat until evenly heated and season more to taste.

The sausages I recommend for this recipe are Field Roast Grain Meat Italian flavor!

You could also substitute in homemade seitan, or any other vegetarian sausage of your choosing, but I recommend something with an Italian or spicy seasoning.
